I’m gonna make like Bella Swan and move to Washington

No really, I am moving to Washington. My little family and I are headed to Tacoma, WA where Nick got a brand new job. He’ll be working for Soma as their National Director of Communications! It’s a perfect job for his skill set. I’ve never been out west, let alone the pacific northwest, so I am excited to experience it!

However, I am devastated to be leaving my amazing friends here in Minneapolis. My heart is heavy with grief just thinking about it. I’ve had several people attempt to ease that pain with the consolings of “you’ll make new friends.” While that’s well and true, it doesn’t lessen the pain of leaving friends here. And moving even further away from Nick and I’s family. And leaving Drew and Linds.

I’ve lived near or with Drew for the past 6 years. And now that Lindsey is a part of the family, and one of my dearest & closest friends, I’m unsure how I’ll handle being apart from them. As well as her beautiful baby belly; my little niece or nephew.

I’m excited to go, and sad to leave. I’ve been doing a lot of praying and relying on Jesus to be my strength at this time. I’m so proud of my husband who provides so well for us and is literally amazing at everything he does. I know we will be taken care of.

The kicker is, we are leaving Mpls the beginning of June. Nick is driving out with all our belongings June 9 and then Sol & I will fly out the 12. I know. Soon. We already found a place to live that we really like (at least from the pictures). It’ll be fun to get settled. I won’t be landlocked anymore! It’s so bittersweet.

Come visit us before we leave! I’ll be packing like a mad woman.

The finished baby room! (long overdue…)

So 4 months ago I lamented about how far I had to go in preparation for Solace’s room. It was hideously messy. I was so overwhelmed by what had to be done. I don’t think it’s still officially done; I would still like to print out some pictures to go in it.

So, while I was in labor at home (that post is in progress!), Nick was actually setting up the crib! A dear friend of mine– Shout out to Jeanea and Andrew!– drove this crib up to us from West Virginia but couldn’t find the hardware for it. Then it got lost in the mail, got sent back to WV and finally arrived at our house mere hours before I was writhing in pain with contractions. I really wasn’t prepared at all for Solace to be sleeping in her room 2 days later. This is the cleanest her room has been since my mom and dad left 2 and a half months ago.

So without further ado, Solace India Mae’s room…

my dad made this shelf for me when I was a teenager. I spray painted it to match the other furniture. A Book of Sleep is the cutest book I’ve seen yet. The illustrations are phenomenal. The other book is called B by Sarah Kay which Nick gave to me. It’s a love note from a mother to her daughter. 

Jenny Rigney made the banner and the tiles for my baby shower which was a “cookies and milk” theme

each tile describes a different type of cookie. it’s adorable!

I spend so much time in here, it’s nice to have it looking cute and friendly. Solace obviously couldn’t care less what it looks like, but hopefully someday she’ll appreciate my efforts (as well as the panic, distress, anxiety and devotion that I put into this room!) I never did find a rug for the middle of the floor but that’s ok.

Fortunately in the pictures you can’t really tell that the floor slants so badly that all the furniture is strategically placed and can never be rearranged unless we want things to go flying and baby to roll. No. just…no.

Approximately 5 minutes after taking these pictures, I decided to bring out Sol’s 3-6 month clothes (yes, she fits them) and the room became a disaster once again. :)

I’m back! 

And today I am 18 weeks pregnant. I’ve hesitated putting up a picture for a while now. Not because I don’t want anyone to see, but because I feel self-conscious. Weird, I know. Seems like my belly is not very photogenic. However, here you go…

Yay for baby Laparra! :) :)

My nausea is almost completely gone. Sometimes it’ll rear up for an hour or 2 but no more than that. I’m so happy! I can’t begin to describe to you the horrific-ness those 3 months held for me (and ultimately Nick!). I’m thankful it’s passed.

My body has changed so much. I’m much more uncomfortable in general. I’m still in the beginning stages of my tummy growing so my regular clothes don’t fit but I’m not ready to buy new maternity clothes yet. I run out of breath easily and sigh pretty deeply. Sleeping is a little rough. I think I have a mild case of rhinitis of pregnancy, which is a constant stuffy nose. Not a fun symptom. I still get pretty tired during the day, but that’s to be expected.

My mind? Gone. Can’t find it. I forget so many things during the day. Nick will ask me to do something for him over the phone and as soon as we hang up, I’ve forgotten about it. I’m not exaggerating.

In the midst of these weird changes in my life, I’m so excited because in 2 weeks we find out the gender of our baby!!

Yes, we are finding out.
Yes, we will be telling everyone!

I’m not very patient. I feel like I can’t do any planning without knowing (or at least attempting to find out) the gender! As for the name, we aren’t very sure what it will be, boy or girl, and I’m sure with people like Nick and I, it could change at the very last minute! So we probably won’t be telling that until the baby is born. Picking out a name is one of my favorite parts about being pregnant!

Anyway, until we find out the gender, here is a little poll for you all. What do you think baby Laparra will be? Boy or girl?

Soft Preztel Recipe

I’m trying to be domesticated. Mainly learning how to cook better, use my ingredients wisely, etc. I post these things on here to keep me accountable and to see my progress. So my friend Sarah DeWire and I made soft pretzels together the other night. And let me tell you…it was uh-maze-ing. She gave me permission to post this wonderful family recipe on here with all of you :)

Things you’ll need:

1 package active dry yeast
1/8 cup warm water
1 1/3 cup warm water
1/3 cup brown sugar
5 cups flour

So simple!

First, dissolve the yeast in 1/8 cup of water. Then add the rest of the water.

Stir in the brown sugar. Then gradually add the flour

It gets tougher to mix by the time you add all the flour. I used a spoon for most of the mixing, then resorted to my hands! Knead the flour (which takes a while, so stay patient!), until it’s in a round ball like this

Now shape it into a long oval, like a loaf of French bread (which is my favorite type of bread, by the way…) and grab a knife

You’ll want to cut slices off the “loaf” that are about 1-1.5 inches in thickness

Now take your slice and begin to roll it into a long snake. Honestly, this part was the hardest for me! The flour on the outside of your slice will make it slippery to work with. So I would put some water on my hands to help it from sliding. And if I’m really honest, I’d tell you that Sarah rolled all of these because I kept failing…

But I’m not that honest so I won’t tell you that. Also, those aren’t my hands. I told Sarah to do this cuz she has the pretty hands. The end.

You should get about 15 of these rolled out. To form the pretzel shape, take your long piece and make a “U”

Then twist the two ends together once,

and then once again,

Now fold the twisted end down,

and then make indents on the end to keep the pretzel together.

your pretzel should look like this

Once all of your pretzels are made, put together a baking soda and water mixture and set it to a low boil on the stove and dip each pretzel completely in.

remove and lay on a pan. repeat. If you soak the pretzels too long, they might have a slight baking soda taste to them, so don’t leave the stove while you’re doing this.

We made one batch without salt and another with salt. Be sure to salt while the pretzels are still slightly wet so that the salt sticks. Then put these in the oven at 475 degrees for around 8-10 minutes. Keep an eye on them. Depending on your oven, they could bake faster than that.

Now pull ‘em out and stuff your face right away! The brown sugar adds a slight sweet flavor to them. My favorite were the salted ones. The sweet and salty taste always does me in. SO good.

You want to eat them, don’t you? It’s ok, go ahead.

Also? They taste great the next day! Hot or cold, but preferably after heating them up a tiny bit in the microwave. I had 2 for breakfast the following morning after making these. Nick almost didn’t get any! I want to make these today. But alas, I have no yeast.

Homemade Soft Pretzels

1 package active dry yeast
1/8 cup warm water (105 degrees)
1 1/3 cup warm water
1/3 cup brown sugar
5 cups flour

1. Dissolve yeast in 1/8 cup of warm water (about 105 degrees).
2. Stir in the rest of the warm water (1 1/3 cups).
3. Stir in brown sugar.
4. Stir in flour, adding gradually until you eventually have to knead it by hand.
5. Knead until all the flour is worked in (you may find that you need a little more or a little less than the 5 cups) and the dough is no longer sticky.
6. Once the dough is ready to be worked with (no longer sticky), form it into the shape of a long loaf of french bread.
7. Cut portions or “slices” out of the whole “loaf” at about a 1-1 ½  inch size.
8. Take one portion at a time (this is where the whole family can get involved) and roll it out into a long snake. Once it’s long enough (somewhere around 1 ½ to 2 feet long), place it on the table in a “U” shape. Twist the two ends around each other twice. Then fold them down so that the ends (past the twists) are sitting on the bottom of the pretzel (looking at a picture of a pretzel may help here). Use your fingers to push down/indent on the two spots where the ends cross the bottom.
9. Dip pretzels in baking soda/water combination (4 tbsp baking soda in 2 cups water) kept at a low boil on the stove and place on cookie sheet.
10. Bake at 475 degrees for 8-10 minutes (depends greatly on your oven…when we did it the other night we only had to leave them in for about 4-6 minutes, so keep a close eye on them).

Yields about 15-17 pretzels in one batch

It’s my birthday :)

Today was my 23rd birthday. I knew it would be great but I didn’t realize how much so!

1. My husband wrote the most amazing blog post about me. He makes me feel all warm inside.

2. My small group girls (Allison, Katie, Sarah, and Carrie) surprised me with breakfast at iHop!

3. Nick gave me 3 different presents. All wonderful

4. Orison and Morrow Piper called me to sing Happy Birthday. My heart melted.

5. I got some AMAZING deals at Yankee candle. Now my house will smell like my mom’s :)

6. I watched “The Ring” with Nick. I didn’t get scared. :(

7. Nick and I went to Red Lobster! oh yum…

8. Andrew, Stefan, and Tristan made me this “so awesome I can’t even take it” video singing happy birthday to me.

9. Some of our small group friends came over to eat birthday cake (made by Katie Burns!), chocolate covered pretzels, and watch Mulan!

10. Marley was terribly cute ALL day long. Not a surprise. haha

I am so blessed, you guys. All of the birthday wishes, love and prayers from you just absolutely made my day. Thanks for making me feel special today. It felt really good.

The One Time I Played in the Snow

It snowed yesterday. A lot. Like 16.5 inches. Most people stayed in their homes like good little boys and girls, drinking hot cocoa and eating cookies with chestnuts roasting by an open fire. But not I. Not Nick. Not half of Bethlehem Baptist Church who had free tickets to see Narnia yesterday morning! We braved that storm and drove to the theater at 30 mph. We grabbed Starbucks on the way there and waited an hour for the movie to start. On the way home, we again drove 30 mph or less and helped someone get unstuck, drove a woman home, dropped Andrew off, got gas, and then got stuck for half an hour in our alley way. Nick threw out his lower back shoveling our walkway. I baked these and helped Nick make these. Nick shoveled some more and then we went to a party at Allison’s house! We got there around 8pm and stayed til 3am. Oh yes.

Now, if you all know me well at all, you’ll know that I hate playing in the snow. I don’t go outside unless I have to when it’s cold. (So, basically, all winter I stay inside. And I am so cool with that.) But our back yard was begging me to try something out. I wanted to see if I could jump in the snow and sink. Like all the way down. I’m stupid, ok?

I realize I look like a little fat kid. I have no boots on because I can’t find them (btw, all you moving helpers a week ago…know where they could be?). And, I didn’t sink :( Wasn’t that Christmas music a great touch? Drew didn’t realize it was even on til after we watched the video! Oh man, I make myself laugh. I think my favorite part is when I hesitate for like forever at the beginning.

Anywho, it snowed a lot. And I wanted to show you how much so. That’s the last time I play in the snow.

Lil’ Miss Homemaker (Sorta)

I’ve never been a Top Chef. In fact, I don’t even really like cooking. But I read The Pioneer Woman’s blog and she is always showing me these fancy-shmancy recipes and I’m all like “heck I could do that,” full well knowing I can’t. And probably shouldn’t. You’ve never seen some of my disasters. scary.

However, since we’ve established before that I am not right in the head, I got this crazy idea last night after reading one of her posts and then seeing chocolate in my fridge that we’ve had since MEMORIAL DAY. Too long.

I decided to make Chocolate Chip Cookie Sweet Rolls and Cinnamon Rolls from scratch. Yes, you read that right. From SCRATCH. Yeah, baby! It just so happened that I had ALL the ingredients minus 4 things. This never happens to me.

It was destined for these rolls and I to be together.

I had dreams of going to do Yoga this morning after preparing the dough (and letting it sit for an hour to rise). Then coming home and humming my way through 30 more minutes of prep work like a sweet lil’ homemaker would.

Didn’t happen.

I started my prep at 9am after over sleeping and not going to yoga. My dough didn’t rise after it sat there for an hour. I went ahead with it anyway. It was terribly sticky and hard to work with. I covered our whole table with flour and borrowed a rolling-pin from our neighbors. The dough stuck to the rolling-pin and kept getting holes in it. I rallied on.

I poured the butter, cinnamon and sugar on the rolled out dough and it started streaming off the dough and onto the table. It was like a water fall. At this point, I dragged Nick into my mess. Why do it alone?

You can even see Nick trying to keep the butter from running off the table! He and Drew were real troopers and cleaned up that whole table for me. After rolling up the Cinnamon one, I realized I forgot to put sugar in them. There was only cinnamon in those suckers. So Nick just sprinkled some sugar over the tops! I was supposed to put them in a baking pan and let it rise for 30 minutes. That didn’t happen either. It was already 11:30am at this point! We hadn’t eaten anything yet. In they went.

Now, the icing. 2 different icing recipes, actually. One turned out PERFECTLY. What a relief. The other? Not so much. I was supposed to use an electric mixer but seeing as I don’t have one of those, I had to do it by hand. 8oz of cream cheese, 1 stick of butter, powdered sugar, salt, milk, and vanilla. This is impossible to mix by hand. Even for Nick. The end result was that the icing was not thick and had tiny cream cheese chunks floating around. Ugh.

Therefore, we invited Bryan and Sarah DeWire over. Because again, why do this alone?

Cinnamon Rolls

You see the chunks? [That's probably not the most tasteful word to use, huh. How about bits?] You see the bits of cream cheese? See how it’s all liquidy? Ah, my bane. The Cinnamon rolls got a little burnt on the bottom. But Nick roasted and sugared some almonds to go on them. So neither was perfect like my silly idea at the beginning planned it out to be. Especially since I told everyone we’d be eating by 10am, maybe 11am at the latest. We didn’t even sit down to eat until a little after 12pm! I’m pretty positive this only happens to me. Happy lunching, everyone.

I didn’t particularly enjoy the CCCSR but the Cinnamon ones were fantastic. Now I’m all out of butter and powdered sugar. I’ve had too much butter today. I can feel it creeping around in my fat areas, sticking and laughing at me. Durge. Must. Drink. Water.

Summer 2010 Recap!

I’m back from the dead!!

Did you miss me? I missed blogging. Nick and I have been so busy this summer! There are too many things to say so I shall show you in pictures.

I helped Jenny Rigney pack, move, and unpack her house. I also helped watch her son, Sam! He was way to fun to play with.

Mike Tong threw a “Be Like Nick Laparra” party. It was a riot! Nick was speechless all night.

Our small group went camping! Trent, Katie, Peter, Carrie, Drew, Allison, Stefan, Brenden, Nick and I.

Our friends Tyler and John came to visit right after camping. I haven’t laughed so hard in forever! They definitely kept us entertained. And they loved Marley, so, kudos to them.

Speaking of Marley, we got him declawed! Now he no longer hurts me. It’s great. I still feel kinda bad when he tries to save himself from falling off the couch and there are no claws there to hold him up. But then I giggle. Only a little bit.

Nick and I’s 2 year anniversary was on August 8! We didn’t celebrate big time because we were going to see Wicked on the 21st. I had never been to the Orpheum before. It was terribly exciting!  For those of you that remember, Nick asked me to marry him in New York city right after seeing Wicked. However, during the show he developed food poisoning from food we ate beforehand!.He couldn’t enjoy any of the show. That made me so sad. So this time, I couldn’t wait for him to really enjoy it! And he did!

The show was seriously amazing. I was so overwhelmed by the musical talent. Nick and I couldn’t stop staring at each other with our jaws dropped. They were so awesome.

LOVE IT. I wanna be Elphaba. Please?

My friend Molly Piper had twins; Whit and Cadence! I was fortunate enough to be able to help her out all last week and then 2 days this week before we went on vacation. She also has two other boys, Orison and Morrow. I loved playing with the kids. Holding those babies made me want one of my own even more!

Our friends Kareem and Ashley came to spend last weekend with us. They have a 5 month old son, Nathan, whom Nick and I fell completely in love with! He had this cute little poofy afro and a terribly sweet smile. We spent a lot of time at the MOA. Ashley and I ate too much ice cream. Good times.

I am now sitting in my brother in law’s living room in North Carolina. Nick and I are on vacation visiting our families! We haven’t seen them since last Christmas. Yeah. I promise I’ll take tons of pictures and introduce you to my huge family. They are all so awesome!

My Friday is my Saturday

I love today. My boss gave me the day off and I didn’t even have to ask for it. So far, it has been one of the most relaxing days of the summer.

I cleaned out the fridge and freezer. It was about to give me a heart attack every time I opened the door to this beast. It was so full of leftovers. I hate leftovers.

Everything is now back to the way it should be in there. It’s all labeled so I don’t know why it doesn’t stay this way.

see? drinks only on top and everything else has its respective place. you laugh now, but just wait til you look in your fridge next time. You will WISH that you had some scotch tape and a sharpie.

it makes me sick how much he gets away with things using this face on me every. single. time.

I’m going to end my day with this and I couldn’t be more excited about it!

Oh yes. This Friday is turning out so much better than I imagined.

The OTHER side of my husband

It has been the most insane month. Ever. Probably not ever. I like to use absolute statements all the time.  (see? I can’t stop) It’s not the type of busy to write about either. Just busy. Ugh. The worst kind.

So, I told Nick I wasn’t sure what to blog about today or if I would even have time. He told me to blog about him. I’m positive this isn’t what he meant when he said that, but I’m not normal and this is what I thought of first.  I made these at 2am the other night when sleep so allusive it was depressing. I’m sure my iPhone is a curse, because as I was making these pictures, I was laughing so hard I had to bury my face in my pillow to keep from waking Nick. It didn’t help me feel sleepy one bit!
